Sometime in the middle of the night last week, I was mindlessly surfing through IGTV and a 15 minute Instagram video of someone making caesar dressing entirely from scratch with anchovies got me thinking, what if I don’t have anchovies? Then, I was inspired! I present to you a fusion rendition of this classic rich dressing. I’m so glad that I made this because it turned out amazing. As in, holy smokes, where have you been all my caesar salad life?! It’s so good that all my men voted that, although it’s not a classic, it’s one of the best caesar salads that they’ve ever had. I repeat, One. Of. The. Best.
The secret? Good ol’fish sauce! Because in essence, fish sauce is fermented anchovies. I mean, it makes sense, right? Right! Trust me on this one.
This recipe is perfect for 1 head of romaine lettuce. Do wash and dry the lettuce first so that the excess water doesn’t water out the dressing. Also, we like things garlicky in our house, so I suggest if you’re not a garlic fan to go easy on the cloves at first and adjust as you taste along the way.
Oh and bonus points to me because it’s super easy to make, has minimal dishes, no food processor, and only 5 steps.

Pinch of Pepper
1 Head of Romaine Lettuce
Shredded or Shaved Parmesan Cheese – in the amount that makes your heart flutter
The Not Your Classic Caesar Salad Dressing
- Small Jar
- 1 tbsp Honey
- 1 tbsp Fish Sauce
- 2 tbsp Mayonnaise
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1-2 Cloves of Garlic finely minced or put through a garlic press
- Pinch of Pepper
- Add all the dressing ingredients to a small jar.
- Shake well.
- Taste test and adjust garlic and lemon juice to your taste buds.
- Pour over chopped romaine lettuce, croutons, and cheese.
- Plate it, or eat it right out of the salad bowl cause there's no judging here, and enjoy!
